“Hiking” in Amsterdam itself is realistically just an ambitious walk — the centre is flat and built — but a short bike or train ride opens up the genuine walking landscapes: the dunes and beaches of the Kennemerland coast at Zandvoort and Bloemendaal aan Zee (25 minutes by train from Centraal), the polders and water reserves of Waterland just north of the IJ ferry, the heathland of the Veluwe National Park (a day trip east), and the substantial wooded paths of Amsterdamse Bos to the south.
